Slow cooker clean eats Italian chicken!

I am always on the prowl for some clean eats crockpot cooking…

So, I was delighted when I ran across this one today!Clean eating crock pot chicken

Here is the recipe:

  • 4 lbs. boneless, skinless chicken breasts
  • 5 medium tomatoes, chopped
  • 1 onion, chopped
  • 3 T. garlic, minced
  • 2 T. tomato paste
  • 2 T. olive oil
  • 1 T. honey
  • 2 T. Italian Seasoning
  • 1 T. red pepper flakes
  • 1 tsp. sea salt
  • 1 tsp. black pepper

This Clean Eating Slow Cooker Italian Chicken is a super easy meal that you can feel good about feeding to your family.  It’s packed with fresh ingredients and has enough flavor that you can eat alone, over salad, or over your favorite rice.  Enjoy!

  1. Mix all ingredients (except chicken) together and mix for about 30 seconds until ingredients are mixed well.
  2. Place chicken breasts and sauce in crock; cover and Crock on LOW heat for 7 hours.
  3. Shred chicken with 2 forks. Let chicken absorb sauce and crock for another 30 mins. to 1 hour on LOW.
  4. Serve with your favorite pasta or quinoa.

What can I say…I hate to cook.  I mean really.  You wake up at 4:15 a.m., get your workout in, get ready for work and out the door by 7 a.m.  Work all day and then head home at 5 p.m.

Who really, really feels like cooking at that time?

Do you?

I know that I don’t.  But, yet, I do want to eat clean.  I have had some amazing weight loss results in the last few months and I feel so good.  The one thing that can jeoporize that feel good feeling is ruining my nutrition.  So that must stay constant.

And, a crockpot makes it all so easy.  Prep the ingredients ahead of time, stick them in the crockpot the morning of, press high (or low), and then walk away.

I am always on the prowl for new recipes.  Rarely do I ever make the same dish twice.  Thus, the title of this blog…”Another one hit chicken wonder from the land of the Crockpot!

I came across this great recipe…not sure who needs credit but someone does.  I can’t say that I was the brainchild behind this one.  Rarely am I ever!

But, I do know that I am going prep this baby over the weekend so on Monday morning, I just hit “play!”

Another one hit chicken wonder from the land of Crockpot!Chicken Crockpot Eat Clean Wonder

Ingredients:
– 8 boneless skinless chicken breasts
– 10 garlic cloves, finely chopped or minced
– 2 yellow onions, chopped
– 2 cups fat free, low sodium chicken broth
– 1/4 cup lemon pepper seasoning
– 4 tbsp paprika
– 2 tbsp fresh parsley, finely chopped
– 1 tablespoon kosher salt
– 1 tsp lemon zest

Directions:
Rinse the chicken and pat dry. Mix together the lemon pepper seasoning, paprika and salt. Coat the chicken with the spice mixture. Place the coated chicken in the crock pot and cover with the fat free chicken broth, garlic cloves, parsley and onions and lemon zest. Cook on low heat for about 3-4 hours (or until done).

“Fix and Forget About It” 21 Day Fix Chicken – YUM!

I just love my crock pot.  I mean I really, really love it.  It truly makes clean eating so simple.  And, I just hate to cook.  So I like to prep the ingredients, plug in the machine, and then basically walk away.

I came across this recipe some time ago and thought I would share with you.

I am calling it:Easy Crockpot Chicken - 21 Day Fix

“Fix and Forget About It” 21 Day Fix Chicken

Ingredients:
3-4 chicken breasts
4 cloves of pressed garlic
2 tsp of chili powder
2 tsp cumin
1 Tbsp. cilantro
4 bell peppers, any color (sliced)
1 large onion (sliced)
1 14 oz can of diced tomatoes (use a low sodium version or check out this easy recipe for stewed tomatoes)

Instructions:
Put all ingredients in the crock pot and cook on low for 8-10 hours or high for 4-6 hours.

If your time will allow it, add the bell peppers to the slow cooker in the last hour so they aren’t too soggy.

When the cooking time is over, shred chicken with a fork.

To Serve:

Place 1 Red container of the chicken mixed with tomatoes and garlic onto a 1 Yellow whole wheat flour tortilla. Top with 1 Green container of sliced peppers and onion.

Optionally serve with 1 Tbsp. of Non-fat Greek yogurt or a Blue container of shredded cheese.

1 fajita is 1 red, 1 Green, 1 Yellow and an optional 1 Blue.

Clean eating pork chops in the slow cooker

In the winter, I like to do some cooking with the slow cooker.

I will oftentimes Google clean eating recipes to see what comes up for slow cookers.

Most of the search results, I have to sift through because once you start to look at the ingredients, they truly are not clean eats.

I was thinking of my upcoming week and planning it out and did my Friday night Google search and happened upon this recipe for pork chops in the slow cooker.

Other than the amount of the olive oil, I think that you will agree, they both look and sound like delish clean eats.

21 Day Fix Approved Pork Chops

Always, always looking for clean eating crockpot recipes.

I just love my crockpot.

Stick in the ingredients, plug in the crockpot, turn it to low, and head off to work…return to savory smells and dinner done.

Here is a recipe I think I am going to try that is #21 Day Fix Approved:

Crockpot Pork Chops
Dice one small onion, cut 4 potatoes (can be sweet potatoes too) into chunks, pour in 10.5 oz. of chicken broth and then the pork chops…set on low for 6-8 hours and done!21 Day Fix Approved Pork Chops

You may want to spice up the pork chops ahead of time… but watch out for the spices that you use…they can add extra sodium.
